Elephant Chipitani Sculpture in SilverIn 1985, Patrick bought a large 119 pound tusk from the Department of National Parks and Wildlife. The legendary game warden, Willie De Beer, later identified it as belonging to a well known single tusker of the Chipitani Hills, known as Chipitani. Later, Patrick received photographs of this lone bull that proved, without doubt, that it was Chipitanis tusk. He carved Chipitani using the photos taken of him so long ago, as reference. GRISTLE
These are large pieces compared to their other products. So you know, these, specifically my order, has so much connective tissue, that once you're done separating the meat from the gristle, the larger portion is gristle. Flavor is great as usual though.
